I’m so, SO happy to share this recipe with you today because these snickers really were a huge success at home.

I used to love snickers bars as a kid so I wanted to make my own vegan and healthier version. If you’re a peanut butter lover like me, trust me, you’ll LOVE these snickers bars!

Easy No-Bake Snickers Bars

These snickers bars are very easy to make and take only 10 minutes. As always, the longest part is to wait while they set in the freezer. I froze mine for 2 hours and I recommend that you don’t skip this step, otherwise the caramel will still be very creamy and you will have a hard time cutting bars.

As you can see, my snickers are very thick but you can use a larger container to make thinner bars. I just think they are more comforting when they are thick.

To make the caramel, I simply blended Medjool dates with peanut butter and coconut cream until thick and creamy. I think this caramel tastes absolutely delicious.

The nougat base is made of oat flour, almond flour, cacao powder and 1/4 cup of the date caramel. The first time I made these snickers bars I didn’t add cacao powder but I think they taste better with it since they aren’t fully covered with chocolate.

To make the chocolate layer, I melted dark chocolate and coconut cream and poured that on top. That’s how simple it is.

Homemade Vegan Snickers Bars (Gluten-Free) made with only 8 ingredients! Easy to make, delicious and perfect for any occasion!

  • 1 + 1/2 cup Medjool dates, pitted (15 dates - 250 g)
  • 2 tbsp natural peanut butter
  • 2 tbsp coconut cream
  • 1/2 cup oat flour (50 g)
  • 1/4 cup almond flour (25 g)
  • 1/4 cup date caramel (3 tbsp)
  • 1 tbsp cacao powder
Other ingredients:
  • 1 handful roasted peanuts (unsalted)
  • 2/3 cup dark chocolate (110 g)
  • 2 tbsp coconut cream
For the caramel:
  1. Soak your dates in hot water for 10 minutes and drain them. Place dates, peanut butter and coconut cream in a food processor and process until thick and smooth. Scrape down sides of the food process to make sure everything is combined. Transfer the caramel to a container.

For the nougat:
  1. Add oat flour, almond flour, cacao powder and 1/4 cup of the date caramel to the food processor and process until the dough sticks together when you press it between your fingers.

Assemble the snickers:
  1. Transfer the nougat to a small square container lined with parchment paper and spread it evenly with a spatula. Slightly wet the spatula if the dough is too sticky.

  2. Spread the remaining caramel over the nougat and top with peanuts. Press slightly so they stick to the caramel. Freeze while you make the chocolate layer.

  3. Carefully melt the dark chocolate with the coconut cream using the double boiler method. Be careful not to burn the chocolate here.

  4. Once the chocolate is melted, stir well to combine and pour the mixture in the container, over the peanuts. Spread it in an even layer with a spatula. Then freeze for 2 hours.

  5. Slice into bars or squares and enjoy!
