I’m very happy to share this recipe with you today because I’ve made these cookies ever since I went vegan in 2014 and I still enjoy them very much today 🙂

HEALTHY AND DELICIOUS VEGAN COOKIES

To make these cookies, you will only need 3 ingredients – oats (make sure you use gluten-free oats if needed), ripe bananas and chocolate chips.

Yep, that’s it!

Simply combine the oats and the mashed bananas together and fold in the chocolate chips. I like to use a generous amount of chocolate chips because, you know… there’s never too much chocolate 😀

PERFECT FOR MEAL PREP!

If you like meal prepping, these cookies will be perfect for you. Not only are they very easy to make, but they are also very healthy and great as a quick snack or breakfast!

I like to keep them in an airtight glass container and grab one or two or three every morning 🙂

Ingredients
  • 1 cup oats (GF)
  • 2 small ripe bananas
  • 1 big handful dark chocolate chips
Instructions
  1. Preheat oven to 350F or 180C.

  2. In a bowl, mash bananas with a fork. Add in oats and dark chocolate chips and combine.

  3. Scoop 1 heaped tablespoon of the dough and form a cookie with your hands. Repeat the process with the remaining dough. I made 8 big cookies.

  4. Place the cookies onto a lined baking tray - they won't spread during the cooking process.

  5. Bake for 12 minutes or until golden brown.

  6. Transfer to a cooling rack and allow to cool completely. Store at room temperature in an airtight container for up to 1 week. Enjoy!

    the recipe on this post is for peanut butter fudge not oatmeal cookies.
