Rainbow Coconut Crunch Cups
When I need a quick and easy dessert, I usually go for something that involves chocolate because everyone in my family loves it. This recipe was inspired by my Amaranth Crunch Cups with Peanut Butter which are so easy to make and very versatile.
These cups are incredibly crunchy and addictive so be careful because they probably won’t last very long!


Vegan Chocolate Crunch Cups are Easy to Make
To make these crunch cups, you only need chocolate, popped amaranth, shredded coconut and coconut cream. I colored the shredded coconut with Unicorn Superfoods powders to make them more festive, but it’s totally optional.
All you have to do is:
- Combine the melted chocolate and the popped amaranth in a bowl.
- Fill one third of cupcake cups with the mixture, place one tablespoon of coconut filling in the center and cover with more chocolate.
So easy!


Crunch Cups are Easy and Delicious
These chocolate crunch cups only take about 20 minutes to make and are very versatile. You could fill them with peanut butter, chocolate ganache or chia jam for example.
They are always a hit here — there’s something about the popped amaranth and the chocolate that brings them to a whole new level of deliciousness.
