BAKED CHICKPEA FRENCH FRIES

These chickpea french fries only require 2 ingredients and are very easy to make! You’ll only need chickpea flour and water to make these delicious, crispy and healthy fries. I personally love the taste of chickpea flour and I find that these fries go really well with hummus or this vegan cheese sauce (recipe below).

HEALTHY AND HIGH-PROTEIN FRIES

Since these fries are baked, they are completely oil-free. They are also naturally gluten-free and high in protein since they are made with chickpea flour. To make them, you just have to boil the water and stir in chickpea flour until the mixture thickens. Then, transfer the mixture to a lined baking pan and let it set in the fridge for 1 hour. After 1 hour, slice into fries and bake until golden brown and crispy.

FRIES WITH EASY VEGAN CHEESE SAUCE

I really like to dip these fries in a vegan cheese sauce that is made with red lentils, carrots, coconut milk and nutritional yeast. The sauce is ready in 5 minutes and has a nice cheesy flavor thanks to the nutritional yeast. You could also make hummus or use store-bought tomato sauce 🙂

Ingredients
For the fries:
  • 1 + 1/3 cup chickpea flour (130 g)
  • 2 cups water
  • 1 tbsp curry powder (optional)
  • salt & pepper (optional)
For the vegan cheese sauce:
  • 1/3 cup red lentils, cooked (25 g)
  • 3 carrots (150 g)
  • 3/4 cup canned coconut milk (200 ml)
  • 2 tbsp nutritional yeast
Instructions
Make the fries:
  1. To a saucepan, add water, curry powder, salt and pepper if using. Stir with a whisk and bring to a boil. Add in chickpea flour and whisk constantly for 1 minute until it thickens.

  2. Turn off the heat and blend the mixture with a blender or an immersion hand mixer until completely smooth.

  3. Transfer the mixture to a lined 8-inch (20 cm) square baking pan. Let sit at room temperature for 30 minutes and place in the fridge for 1 hour or until set.

Make the vegan cheese sauce:
  1. Chop the carrots and boil/steam them until fork-tender (approximately 10 minutes). They should be very tender to allow the sauce to be creamy.

  2. Once the carrots are cooked, place them is a high-speed blender along with the red lentils, coconut milk and nutritional yeast. Blend until silky smooth and creamy. Taste and adjust seasonings if necessary.

  3. Transfer the sauce to a glass container and place in the fridge while you bake the fries.

Bake the fries:
  1. Preheat oven to 200°C.

  2. Take the baking pan out of the fridge and cut the prepared chickpea flour mixture into fries.

  3. Align the fries directly on the baking rack and bake for 20 minutes. Placing them directly on the baking rack will make them extra crispy. Flip each fry and bake for another 10-15 minutes. They should be crispy at this point.


  4. Serve immediately with the vegan cheese sauce. Enjoy!
