These Vegan Lentil Potato Croquettes are so easy to make, delicious and perfect for meal prep! They are crunchy on the outside and soft on the inside. Vegan, Gluten-Free, Oil-Free.

Vegan Lentil Potato Croquettes

Lentils and potatoes, that’s it!

These croquettes are made with only two ingredients (not including spices) and are ready in 35 minutes. I love eating them with hummus but I bet they would make fantastic vegan “meatballs” too!

To make the croquettes, all you have to do is:

  1. Mash the cooked potatoes and cooked green lentils in a bowl until smooth. Add spices if you want.
  2. Roll the potato mixture between your palms to form medium-sized balls.
  3. Bake until golden brown and enjoy!

Serve the Croquettes with Your Favorite Sauce

I LOVE dipping these potato croquettes in homemade hummus. Homemade hummus is the easiest thing to make and it’s almost always far healthier than store-bought.

These Potato Croquettes are Great for Meal Prep

What I love about these croquettes, is that they are delicious both warm and cold. Therefore, you could make a double batch on Sunday and bring them with you to work throughout the week, for example.

If you keep them in an airtight container, they will keep in the fridge for 4-5 days. You can also freeze the uncooked balls and cook them whenever you feel like having something crispy, soft and comforting.

Yield: 17 croquettes
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

These Vegan Lentil Potato Croquettes are easy to make, delicious and perfect for meal prep! They are crunchy on the outside and soft on the inside. Enjoy!

Ingredients

  • 400 g potatoes, cooked
  • 150 g green lentils, cooked (2 cups)
  • 1 tbsp curry powder
  • 2 tbsp nutritional yeast
  • salt and pepper

Instructions

  1. Preheat your oven to 430F or 220C.
  2. In a large mixing bowl, add potatoes and lentils and mash with a fork until there is no potato chunk left. Don’t worry if lentils are not completely mashed.
  3. Add curry powder, nutritional yeast, salt and pepper if using. Mash until everything is well combined.
  4. Take about 1 tablespoon of the mixture and roll it between your palms. You should be able to form 17 balls. Place the balls on a lined baking sheet.
  5. Bake for 25-30 minutes or until golden brown and slightly crispy. Serve with hummus or with your favourite sauce. Enjoy!

      I’m referring to the cooked weight. You will need 150g (2 cups) cooked green lentils for this recipe 🙂

      Thanks so much, Maria! I would say 400 g of cooked potato is a little less than 2 cups.
      You don’t need the measurements to be perfect for this recipe though, so don’t worry 🙂

      It’s beetroot hummus – simply blend cooked chickpeas and steamed beetroot together until smooth. Add some tahini and a splash of lemon juice if you want.
