Last year I shared with you the recipe for my Vegan Sweet Potato Tortillas which has been the most popular recipe of the blog ever since. A lot of you have recreated my recipe and have sent me photos on Instagram which has made me so happy.

Today I’m sharing the recipe for vegan potato tortillas, which is almost the same recipe except that I used regular potato instead of sweet potato.

These tortillas are not gluten-free but there is a gluten-free option so don’t worry if you are gluten intolerant.

Homemade Tortillas with 2 Ingredients

Yes, you read that right. You will only need two ingredients to make these vegan tortillas: mashed potatoes and flour!

To make mashed potatoes, simply wash potatoes, boil them, peel them and mash them with a fork. You can also use a potato masher if you want but it’s not necessary.

How to Make these Vegan Tortillas

I’ve made these tortillas a LOT and the simplicity of this recipe always amazes me. Here are the steps to make the tortillas:

  1. Combine mashed potatoes and flour in a bowl and use your hands to form a dough ball.
  2. Then, separate the dough into equal parts and roll out each tortilla with a rolling pin. This recipe makes 8-10 medium-sized tortillas.
  3. Finally, place the tortillas in a hot pan and cook for 1 minute on each side. Cover them with a clean kitchen towel so they stay soft and flexible.

Can I Use Sweet Potato?

Yes, you can definitely use sweet potato for this recipe. Sweet potato gives the tortillas a very pretty color and a delicious taste. I have tried both recipes and I can’t say which one is my favorite.

Can I Use Gluten-Free Flour?

I personally haven’t tried this recipe with gluten-free flour, but some readers have used cassava flour with success and were very happy with how soft and flexible the tortillas turned out.

So if you are gluten intolerant but still want to enjoy delicious tortillas, definitely try this recipe with cassava flour.

How Can I Use these Potato Tortillas?

You can use these vegan tortillas for tacos, burritos, enchiladas, quesadillas, burritos and more. If you make them a little bit thicker than normal tortillas, you can also use them as a pizza base. Tortilla pizza is a delicious and easy pizza alternative when you don’t have time to make a pizza dough.

Here is the recipe for my Easy Vegan Tacos. You can either use regular potatoes or sweet potatoes for the tortillas, depending on what you already have at home.

Vegan Potato Tortillas | 2 Ingredients

Ingredients

  • 300 g potato, mashed
  • 260 g all-purpose flour

Instructions

  1. To a mixing bowl, add the mashed potatoes (steamed, peeled and mashed potatoes) and the flour and stir until well-combined. Use your hands to form a dough ball. It should not be too sticky.
  2. Separate the dough ball into 8-10 equal parts. Dust a working surface with flour and roll out each tortilla with a rolling pin.
  3. Place the tortillas in a hot pan over medium-high heat and cook for 1 minute on each side. Stack the cooked tortillas on a plate covered with a clean kitchen towel while you cook the rest. This will allow them to stay very flexible.

Notes

Gluten-free option: Some readers have used cassava flour with success. The tortillas turned out very soft and flexible.

    Hiii – I’m excited to try these! Quick question = how long can these last for packing purposes? Do we refrigerate? does it need to be in an air tight container? Can we freeze? Just wondering how long I’d have to store them after making. Thank you for sharing recipe!!

      When I make these tortillas, I place them on top of each other and I cover them with a kitchen towel. This way, they stay flexible for at least two days. You can store them in the fridge in an airtight container or you can freeze them for up to 3 months. They freeze very well.

    I made these tonight and they were super easy and very tasty!! I used a tortilla press and the thickness was perfect. Thank you so much for the recipe, it’s a keeper. I felt the potato elevated the tortilla flavor and the overall taco. .
